(or you can use tofu, or leave it meat free!)
2 Tbsp. curry powder
1/4 tsp. ground cinnamon
1 med. onion
2 med. zucchini (sliced thin)
1 1/2 c. chicken broth (or Pho)
1 1/2 c. coconut milk
dash of salt & pepper
Cooked rice (white or brown whole grain)
Place the cubed chicken or tofu in a bowl, add cinnamon & curry powder; toss & set aside. (If you’re going meat free we’ll add the curry & cinnamon later.)
Use 1 Tbsp. Olive oil in pan to cook onion & zucchini until soft. Set aside.
Use 1 Tbsp. Olive oil in pan to brown your chicken or tofu mixture (about 5 min.)
Add the broth, coconut milk, salt & pepper and bring to a simmer.
Add onion & zucchini back to the pan & simmer about 5 more minutes.
Meat-free version–just add cinnamon & curry powder after you cook the veggies. Then add in the broth, coconut milk, salt & pepper & bring to a simmer.
Add to your choice of cooked rice (I prefer brown whole grain) and enjoy!!
