This recipe is super easy.
4 green peppers, centers cleaned out
3 c. cooked rice
Your choice of veggies to add into the rice; I like celery, mushrooms, onions, carrots, zucchini or whatever else you’d like!
Chop the veggies, saute’ in pan with olive oil for just a few minutes.
Stir the veggies together with the rice.
Scoop into the hollow peppers.
Place the green peppers in a greased baking dish. ( I use olive oil in a glass baking dish.) Replace the tops on the peppers. Bake at 350 degrees F for 20-30 minutes. Voila’!
My husband likes to add sweet chile sauce to his, but you can dress it up or eat it plain. Yum!
