Gluten-, Dairy-free dinner rolls

2 tbsp active dry yeast

1 c. + 2 tbsp warm water (around 110 degrees)

1/4 c sugar

Add yeast, water & sugar together and let sit for 5 minutes.

Then add,

1/3 c. olive oil

1 tbsp egg replacer powder mixed with 3 tbsp water

1 1/4 c. white rice flour

3/4 c. potato flour

1/3 c. tapioca flour

2 1/2 tbsp. xanthan gum (add this last)

Mix together.  The dough will be wet and sticky.  

Scoop into greased baking dish (I use olive oil and a glass baking dish.)  Bake at 350 degrees F for about 10-15 minutes.  Enjoy!
